They say the most expensive cheese is sold by tennis player Djokovic and Donkey's milk from the Balkans. They call it polish and would be worth a thousand euros a kilo. They also seem to have started producing it in the Sierra Norte in Madrid. I'll leave it to the rich. I prefer any cheese from my Zamoran land, where there are good pastures with better sheep, goats, burras and cows.
