The mascarpone is the name of a cheese of the North of Italy (Lombardy).Is is of a cheese fresh retrieved from the preparation of cream of milk, cream and acid citric or acid aceticIt owes its name from the Lombard dialect mascherpia or mascarpia which means cream or ricotta.
