sturgeon . ( Of the lat. )(do do stur? o,-? nis ). 1. m. marine fish of the order of the Ganoideos, which back the rivers to spawn. Get to have, in some species, up to five meters in length, and is grey with black blotches on the back and white belly color, with five rows of scales along the body, large, hard and spiky in the Center. It has a small head, the upper jaw very prominent, and in front of the mouth four vermiform appendix, forked tail and cartilaginous skeleton. The meat is edible, with its Roe caviar is prepared, and of dry gas bladder called tail of fish gelatine is obtained.
