TAXCALATE-(Tascalate ) It is a traditional refreshing beverage in the State of Chiapas, Mexico. Its origin is prehipanico. It is prepared with a mixture of water, corn, cocoa, cinnamon and achiote. This last ingredient gives it its characteristic, orange color like the brick. Usually eaten cold. Also is usually prepared with milk instead of water.
