It is a Gallicism, which has been adopted as an expression of admiration and respect. It comes from the French word Chapeau, which means hat and refers to the fact that a sign of admiration was to make the gesture of removing the hat before another person as a sign of respect or admiration. Variant of the pool game where it is about knocking down some pins with the balls.
