BLINI (English: blintz; Russian: ???? ( blin , singular ) , ????? ( BLINI plural ) ; in Ukrainian : ?????? , mlyntsí ) are thin pancakes (species of crêpes) of Slavic origin based on flour, eggs, milk and yeast. Another recipe is yogurt-based. They can be eaten cooked in the oven or fried, with or without any filling. It is very common in Slavic cuisine (Russia, Belarus, Poland and Ukraine). There is sweet and salty blini (like salmon). Its great advantage is the fluffy texture, but it supports all kinds of toppings. Having a neutral flavor it is ingenious to combine several ingredients looking for a certain contrast of textures and flavors, with more acidic, crunchy and fresh touches. Smoked fish are a classic, as well as caviar or black and red roe. They are usually mixed with some creamy dairy, such as cream cheese, crème fraîche or yogurt, and pickles. You can try eatas ideas combining several elements to taste, such as: Salmon, trout, cod or smoked tuna. Caviar or substitute -of other fish or vegetable- , or roe of different sizes and colors. Herring. Thick yogurt -Greek, skyr- , creamy cheese , sour cream , crème fraîche , smetana or cottage cheese . Ripe avocado, forming a well-seasoned cream, or guacamole. Hummus in all its variations. Boiled or scrambled egg. Russian salad. Crab salad. Pickles and other pickles. Natural red onion or pickled. Cooked beetroot. Fine grated carrot. Roasted vegetables. Fresh fennel cut into very fine julienne. Sprouted shoots . Fresh herbs -dill and chives are two classics-. Fruit compotes with cheese or yogurt. Chocolate, honey, cream, syrup or jams for a sweet version.
