Gijas, or better yet jigas, is the name given to minced pork to make sausages. Chorizo mince. With it also makes a cake that carries shredded potatoes. It is typical food of Spain (Castilla-León ). It is also called in other parts of Spain, fox, moraga, chichas, chichos.
